Ingredients:
- 1 ripe banana
- 2 large brown eggs
- 1/3 cup 1 minute oats
- 1/4 tsp cinnamon
- 1/4 tsp vanilla
- 1/4 tsp baking powder
Instructions:
Step 1: In a medium bowl, mash the banana with a fork.
Step 2: Add the eggs and vanilla and mix well until fully incorporated.
Step 3: Mix the 1 minute oats, cinnamon, cocoa powder and baking powder into the banana mixture.
Step 4: Heat a non-stick skillet over medium heat and coat with cooking spray.
Step 5: Pour 1/4 of the mixture into the skillet, cook for about two minutes then flip and cook the other side for another minute or two (cook until golden brown on each side).
Step 6: Serve!!!
Additional Tips:
- I use Quaker 1 minute oats for the best texture
- Add 1/2 Tablespoon of cocoa powder for an extra layer of chocolate deliciousness (I use dutch process for a ritcher flavor)
- Serve with maple syrup, apple butter or even chocolate hazelnut spread for extra sweetness
- Serve with a side of turkey bacon for a complete breakfast or dinner!
